Three-Bag Sampler
Three 250g bags, one from each of the origins we are pouring this month, packed in a box that fits a letterbox.
The box people buy when they cannot decide, and the one we send when somebody asks what we would drink. Three 250g bags, roasted the week they ship, chosen from whatever is at its best on the day rather than from a fixed list — which is why the label on the outside is blank and the label on each bag is not.
Every bag carries the origin, the farm or co-op, the process and the date it came off the roaster. There is a card in the lid with a recipe for each: a dose, a yield and a time for espresso, and a ratio and a grind for filter. Start there and then ignore it, which is what we do.
